These simple 3 ingredient bliss balls are a great way to utilise probiotic whey (a by-product of making labneh). They are uber easy to make, and the coconut and apricots make a great duo. Coconut balances out the natural sweetness of the apricots, and provides sustained energy. It is also is rich in a number of essential nutrients, including manganese, copper and selenium. Dried apricots deliver iron along with vitamins A and C, and partially rehydrating – not to mention fermenting – them means they are digested that much more easily too.

You will need:

1 cup whey
1 cup dried apricots, preferably naturally dried (as a rough guide, apricots without sulphites will be duller in colour)
1 cup desiccated coconut, plus 1/3 cup for rolling

Makes 20-25 bite-sized balls

Method:

Place apricots in a glass or ceramic bowl and cover with whey. Leave to soak until soft, approximately 2-4 hours (the apricots start to lose some of their flavour if soaked for too much longer).

Strain off excess whey (which can be incorporated into a smoothie or another recipe) and place apricots and desiccated coconut into food processor. Blend for a minute or two, until the mixture is well blended.

Shape into balls and roll in coconut. Transfer to an airtight container and store in the fridge. Best consumed within a week.

Variations:

Chopped nuts and seeds make great additions.
